Wild Ink at Home: Making Your Own Granola
It’s just what you need to nourish your body and soul at breakfast time -or anytime.
During the pandemic, several members of Wild Ink’s team have been volunteering as part of the Hudson Yards and World Central Kitchen effort, which is helping to feed the everyday heroes at the Javits Center. Once they get home, they take care to nourish their own body and spirit. To help you do the same, they’ve shared one of their favorite, and long-lasting (if you can keep your hands off it), breakfast options.
VEGAN GRANOLA
INGREDIENTS:
- 3 cups old fashioned oats
- ¾ cups pecans, roughly chopped
- ¾ cups almonds, roughly chopped
- ½ cup flaked coconut
- ½ cup whole wheat flour
- ½ teaspoon salt
- 1 teaspoon cinnamon
- ¾ cup coconut oil, melted
- ½ cup maple syrup
- 1 teaspoon vanilla extract
INSTRUCTIONS:
- Preheat oven to 300ºF.
- Mix oats, pecans, almonds, flaked coconut, flour, salt, and cinnamon together. Set aside.
- Whisk together the coconut oil, maple syrup, and vanilla until smooth.
- Pour coconut oil mixture over oat mixture and stir until fully combined.
- Spread mixture evenly on unlined, rimmed baking sheet. Note: Strive for a thin, single layer.
- Bake for 40 minutes, stirring halfway through.
- Remove from oven (do not stir), and let cool completely before storing in airtight container.
