Wild Ink at Home: Bake a Classic Apple Cake
It’s the dessert the staff craves. Chances are good that your family will too.
Most restaurant crews have a tradition of sitting down to a “family meal” before the evening rush—and they often feast on food that’s not on the menu. A staff favorite for the Wild Ink team? This traditional apple cake recipe. While the restaurant is closed, their cooks are baking it at home, and now you can too.
APPLE CAKE
INGREDIENTS:
For the cake:
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¾ cup granulated sugar
- 1 cup (approximately 1 large) red apple, peeled and roughly chopped
- 2 large eggs 1 teaspoon vanilla extract
- ½ cup vegetable oil
- ½ cup Greek yogurt
- 1 teaspoon ground cinnamon
- 1 tablespoon unsalted butter, melted
For the glaze:
- ¼ cup granulated sugar
- 1 tablespoon milk
INSTRUCTIONS:
For the cake:
- Preheat oven to 350℉.
- Grease and line 8- or 9-inch round cake pan with baking or parchment paper.
- In large mixing bowl, add flour, baking powder, baking soda, sugar and chopped apples and stir briefly to combine.
- In separate bowl, add eggs, vanilla, oil and yogurt.
- Whisk briefly just to break up egg yolks.
- Add wet ingredients to dry ingredients and gently mix with wooden spoon until combined—be careful not to over-mix.
- Spoon batter into prepared tin.
- In separate bowl, add cinnamon, sugar and butter and mix together until lumpy and wet.
- Sprinkle over cake batter.
- Bake cake for approximately 30-35 minutes or until skewer inserted into middle comes out clean.
- Transfer cake to wire rack and let cool completely.
For the glaze:
- Mix together sugar and 1 tablespoon of milk; stir until smooth.
- If glaze is too thick, add extra tablespoon of milk.
- Drizzle glaze over cooled cake.
