Bluestone Lane at Home: How to Make the Original Avocado Smash
It’s the toast that started a worldwide trend—and now you can make it at home
There’s avocado toast and then there’s avocado smash. The latter’s amped-up tastiness has built a cult following of Bluestone Lane customers, from Australia to Hudson Yards. To sate your craving until you can head back to the café, the team at Bluestone Lane has generously agreed to share the magic behind their meal.
INGREDIENTS:
- 2 ripe avocados, halved and pitted
- 1 tablespoon fresh lemon juice, plus more, to taste
- Large pinch sea salt
- Freshly ground black pepper, to taste
- 2 large slices rustic multigrain or gluten-free bread, toasted
- Red pepper flakes, to taste
- Extra virgin olive oil (for drizzling)
- Handful of cherry tomatoes, halved
- Handful of feta cheese, crumbled, to taste
- Seasonal microgreens, such as sunflower or amaranth sprouts, to taste
- 2 poached eggs (preferably free range and organic), optional
- 4 slices fresh prosciutto, optional
INSTRUCTIONS:
- Scoop avocado flesh into a bowl.
- Add lemon juice, salt and black pepper.
- Smash with a large spoon, combining all ingredients but keeping the mixture quite chunky.
- Scoop avocado mixture on top of toast, sprinkle with red pepper flakes and drizzle with olive oil.
- Top each slice with cherry tomatoes, feta and greens.
- Add poached egg and/or fresh prosciutto, if desired.
